The easy vegan hummus bites recipe
The recipe for these chickpea fritters is originally Italian. They call it Panelle., and use all the ingredients for hummus, plus parmesan cheese!
Essentially, you make a thick chickpea flour pancake, with lots of lemon, garlic, and some tahini into the mix. When it’s cooled, you cut it into cubes and serve. Such an easy recipe.

What you’ll need:
1.5 cup chickpea flour
3 cups of warm water
1 teaspoon of sea salt
2 tablespoons of fresh parsley chopped.
You’ll also need vegetable oil for frying.
Mix the ingredients into a smooth pancake batter in a pot on the stove. Stir frequently while on the stove for 5 min. Poor mixture over a lined baking sheet into a 0.25 inch thick layer, sprinkle the parsley over it, and let it cool.
When cooled, cut squares. In a frying pan with 0.5 inch hot oil, fry for 2-3 min on each side till golden brown and crisp. Serve sprinkled with parmesan, some freshly ground pepper, and/or a drizzle of lemon.
Can be eaten on their own or in a sandwich.
(tip: Panelle that have not been fried can be kept in the fridge, covered tightly, for 2-3 days. Or, freeze them for 1-2 months in proper freezer bags; you won’t need to defrost them before cooking.)
