Delicious Pumpkin Cookies Recipe
Katrin shared her melt-in-your mouth and healthy (-ish) pumpkin cookie recipe.
As I need to eat gluten free these days, the idea of making delicious cookies gluten free is a must. With this recipe, it will be easy to make the adjustments necessary, I believe.
Katrin, who doesn't need to worry about those things, shares her not-gluten-free recipe with you. It's a very easy recipe for very flavorful pumpkin cookies. Perfect for any day, now till Christmas.
Why not make some this weekend to test them out to see if you want to add them to your Thanksgiving dinner?

Ingredients (30 cookies)
For the dough:
~ 1 cup butter, softened
~ 1 cup brown or Demerara sugar
~ 1 tsp. baking powder
~ 1/2 tsp. baking soda
~ 1/2 tsp. salt
~ 2 tsp. ground cinnamon
~ 1/2 tsp. nutmeg
~ 1 egg
~ 1 tsp. vanilla
~ 1 cup pumpkin puree
~ 2 cups flour
For the icing (optional)
~ 1/4 cup butter
~ 1/2 cup brown sugar
~ 1/4 cup milk
~ 1 tsp. vanilla
~ + /– 3 cups powdered sugar
~ 2 tsp. cinnamon or more
Tip: You can omit the icing, like I usually do to cut down on butter and sugar.
Instructions
- Preheat oven to 350˚ F (177˚ C).
- Cut pumpkin into small pieces. Either cook it in a pot with a little bit of water, or put on a cookie sheet and bake in the oven for about 20 mins or until soft. Let cool. Blend in a food processor until smooth, or simply mash it. Drain any excess liquid: drink it as it's pure 'gold' in vitamins.
- In a large bowl, beat butter with an electric mixer and then progressively add sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Add eggs, vanilla, and pumpkin. Add flour first with the mixer and when the dough gets too stiff, just using a wooden spoon to stir in any remaining flour.
- Take out little balls, flatten these on your hands and place evenly spaced out on your cookie sheet. Bake for 10-12 min, just till the tops are set. Transfer cookies to a wire rack; let cool.
- In a small saucepan, heat butter and brown sugar until melted and smooth. Transfer to a medium bowl. Stir in milk and vanilla. Beat in powdered sugar until smooth. Spread frosting on cookies. If desired, sprinkle with additional cinnamon.
