Italians Good Luck New Year Stew
Rather than getting tipsy from too much Champagne, on New Year’s Eve at midnight, Italians take some spoonfuls of their traditional good luck dish, Cotechino e Lenticchie. It’s a hardy stew of lentils and sausages; truly comfort food.
According to legend, the shape of lentils resemble the old tiny Italian lira coins. Fatty sausage represents a nice, fat wallet.

The Recipe
Cook lentils for 20 minutes with an inch of water in the pan. As they absorb the water, make sure the bottom does not burn and add water as needed. Add red peppers, onions and tomatoes and cook. Season with rosemary, garlic, and thyme.
In a separate pan, brown a sweet and spicy Cotechino pork sausage with a bit of oil. When done, add sausage and pan dripping to the lentils and cook through.
Prepare a day ahead of time for most flavor.
